Easy Holiday Recipes: Almond Cinnamon Icebox Cookies

Ingredients:

1 1/2 cups butter, softened
1 cup sugar
1 cup packed brown sugar
3 eggs
4 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1/2 cup finely chopped almonds
2 (2.45 ounce) packages whole unblanched almonds*

Instructions:

Cream the sugars into the butter. Add eggs, one egg at a time, beating well after each addition. Gradually add the flour, baking soda, and cinnamon. Lastly, add the chopped almonds and try to distribute as evenly as possible. Split dough in half and shape into log-like rolls. Wrap the rolls in plastic wrap and refrigerate overnight or until ready to bake. Slice about 1/4 inch thick and top each slice with a whole almond (*you can substitute sliced almonds if you don’t want to use whole ones). Bake for 8 to 10 minutes until golden brown edges start to appear, then cool on wire racks.

Casseroles and bakes are my favorite go-to dinners because a lot of the time I just need something I can pop in the oven and let the oven do the work for me. I’m busy and I’m sure you are too but I still need to eat and so does my family.

The BBQ chicken is great but cooking it can be time-consuming. I love this bake in particular because the layer of cornbread adds a lot of flavors but it’s thin so it doesn’t add a lot of carbs or calories.

Ingredients:

  • 1 ½ pound diced skinless chicken breast
  • 1 15-ounce can of pinto, black, or kidney beans (pick your favorite), rinsed and drained
  • 1 green pepper, de-seeded and chopped
  • 1 jalapeno pepper, de-seeded and minced
  • 1 8-ounce can tomato sauce
  • ½ barbeque sauce
  • 1 6-ounce package cornbread mix made into the batter as instructed on the box

Instructions

  1. Preheat your oven to 375 degrees F.
  2. Take your diced chicken cook it in a skillet over medium heat until cooked all of the ways through.
  3. In a saucepan mix the beans, green pepper, jalapeno, tomato sauce, and barbeque sauce and heat over medium heat until heated throughout. Mix in the chicken.
  4. Pour the bean and chicken mixture into your baking dish.
  5. Spoon cornbread batters over the chicken mixture and spread around.
  6. Bake for 18 minutes or until the cornbread is cooked.
  7. Allow sitting for 3 minutes before serving.

Many believe that cabbage will bring wealth in the New Year. Here’s a traditional New Year’s Day meal that will warm you up and hopefully bring you luck in the coming year.

Ingredients:

1 5-pound corn beef brisket with spice packet
6 potatoes, peeled and quartered
1 large head of green cabbage, cut into wedges

Instructions:

Open spice packet and rub spices onto the brisket. Be sure to coat both sides. Place brisket in a large cooking pot and cover completely with cold water. On high heat bring water to a rapid boil. Once boiling reduces heat to medium-low, cover pot and simmer brisket for approximately 3 hours. Remove lid and place quartered potatoes in a pot. Recover and simmer 20 to 25 minutes until potatoes are almost fork tender. Remove lid from pot and place cabbage wedges on top. Simmer uncovered for approximate 15 minutes or until cabbage and potatoes are at desired tenderness.

Ingredients:

3 to 4 cups chopped pecans
2 8-ounce cans refrigerated crescent dinner rolls
1/2 cup sugar
1 teaspoon cinnamon

GLAZE:

1/4 cup sugar
1/2 cup honey
2 tablespoons butter
2 teaspoons lemon juice

Instructions:

Unroll one can of the crescent dough into two long rectangles and put it in a 9×13 baking dish, pressing to the sides to make a crust. Press together any seams across the middle and sides. Bake this crust for 5 minutes at 350 degrees F. Mix together pecans, sugar, and cinnamon. Spread this mixture evenly over crust. Unroll the second can of the crescent dough into long rectangles again, laying over top of the mixture to create a top crust and pressing to edges of the pan to close. Cut lengthwise and diagonal vents in the crust, be creative and make a pattern of diamonds and crosses if you want.

Time to make the glaze. Combine all the ingredients for glaze in a saucepan and bring them to a boil. Spoon half of glaze evenly over the top dough. Bake for 30 minutes at 350 degrees F. Spoon the remaining glaze over the hot baklava as soon as it comes out of the oven. Cool on wire rack at least one hour before moving to the refrigerator to chill until ready to eat.

Ingredients:

3 large potatoes, peeled and quartered*
1/4 cup milk
3 tablespoons butter
2 cloves garlic, minced
1/4 cup finely chopped cooked ham
1/4 cup shredded Cheddar cheese
Salt and pepper to taste
1/4 cup oil for frying

Instructions:

Bring a large pot full of water to a boil and add potatoes. Cook about 15 minutes until firm, but tender. Shred. *(Just start with a bag of shredded potatoes or shred up some leftover baked potatoes from last nights dinner)

In a saucepan mix garlic, butter and milk and bring to a boil. Next stir in the shredded potatoes, ham and cheddar cheese. Season with salt and pepper to taste. Cook to a dough-like consistency. Time to fry them up! Heat your oil in a large skillet. Drop a spoonful of the mixture in the hot oil and cook until golden brown on both sides. Great as a side dish with dinner or for breakfast with a slice of toast and some orange juice. You can vary the ingredients to your liking. For example use sausage instead of ham, mozzarella instead of cheddar, vegetables instead of meat, etc. Try different combinations and see what you like best.
